It just happened that I had red cabbage, red onion and a beet in the house and wanted something cold and crunchy to eat. I really like the raw beets in this slaw!
Ingredients:
1/2 small head of red cabbage
1 large red beet
1/2 medium red onion
2 teaspoons grapeseed oil (or other neutral oil)
2 tablespoons brown rice vinegar
1 tablespoon ume plum vinegar
salt to taste
pinch of cayenne pepper
Directions:
1. Grate the beets, cabbage and onion on a course grater, a food processor is best for this.
2. Toss the grated vegetables with the oil, vinegars, salt and cayenne pepper.
3. Serve.
