This is the 2nd of the Irish Soda Breads with fruit. Hope you will enjoy this as much as I do...
Ingredients:
4 cups all purpose flour plus 1 tablespoon for dusting
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3 cups dark seedless raisins
1 tablespoons caraway seeds
2 eggs, slightly beaten
1 1/4 cups buttermilk
1 cup sour cream
Directions:
1. Heave oven to 350 degrees.
2. Grease 9 inch round cast iron skillet or baking pan.
3. Combine 4 cups flour, sugar, baking powder, soda, salt, raisins,
4. and caraway seeds in large bowl.
5. Blend eggs, buttermilk and sour cream in small bowl.
6. Stir into flour mixture just until flour is moistened.
7. Knead dough in bowl, about 10 strokes; dough will be very sticky.
8. Shape into ball; place in skillet; cut a 4 inch *x* , 3/4 inch deep, across top of dough.
9. Sprinkle with remaining tablespoon flour.
10. Bake in 350 degrees oven 65 to 75 minutes or until wooden pick inserted in center tests clean.
11. Cool in skillet 10 minutes.
12. Turn bread out onto wire rack to cool completely.
