Super Hero Morning Muffins

Delicious muffins. Make them large or small. Eat them slowly with a cuppa hot steamin' coffee or grab one on the go. Either way they are the Super Hero Muffin!
Ingredients:
1 cup rolled oats
1/2 cup bran cereal
1/4 teaspoon salt
1/2 cup boiling water
1-1/2 cups buttermilk
1/2 cup dried prunes,.chopped
1/2 cup dried cranberries
1/2 cup chopped nuts, your choice (optional)
1/3 cup sugar
1 egg
1/2 cup oil
1-1/2 cups whole wheat flour
1-1/4 tsp baking soda
1 teaspoon cinnamon (optional)
Directions:
1. Prepare muffin tins (either greased or paper liners)
2. In bowl, combine oatmeal, bran cereal, salt
3. Pour boiling water over mixture, stir, until combined
4. Stir in *1 cup* buttermilk, prunes, cranberries, set aside
5. In medium bowl, whisk together sugar, egg, oil
6. Add oatmeal mixture
7. In large bowl, stir together flour, baking soda and cinnamon.
8. Pour bran mixture and the other *1/2 cup* buttermilk into flour mixture, stir lightly just until combined
9. Pour into prepared muffin tins
10. Bake at 375 degrees 18-20 minutes
