This is so easy! To speed up the prep time I like to make the patties ahead of time and refrigerate or freeze them. The turkey breast brings the total fat down while the ground round adds moistness and flavor. Serve with roasted vegetables such as potatoes and carrots. Update - I have added a few options to the meat mixture to add additional flavor.
Ingredients:
3/4 lb ground turkey breast
3/4 lb ground round
1/3 cup dry breadcrumbs or 1/3 cup quick oats
2 large egg whites (can use 2 whole eggs)
1 carrot, peeled and grated
1 -2 garlic clove, finely minced
1/2 cup onion, finely chopped (optional)
1/4 cup green pepper, chopped (optional)
1/2 teaspoon seasoning salt (optional)
1/8 teaspoon pepper (optional)
cooking spray
3/4 cup water
3 tablespoons tomato paste
2 tablespoons madeira wine or 2 tablespoons dry sherry
1 1/2 teaspoons worcestershire sauce
1/4 teaspoon fresh ground black pepper
1 (10 1/2 ounce) can condensed french onion soup (such as campbell's)
fresh sliced mushrooms (optional)
Directions:
1. Combine ground turkey, ground round, breadcrumbs or oats,eggs,carrots, onions, green pepper, salt and pepper.
2. Divide meat mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.
3. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
4. Add patties; cook 6 minutes or until browned, turning after 3 minutes.
5. Remove patties from pan; keep warm.
6. Stir in water, tomato paste, wine or sherry, Worcestershire sauce, pepper, and French onion soup.
7. Bring to a boil; add patties and fresh sliced mushrooms if using.
8. Cover; reduce heat and simmer 10 minutes.
9. Uncover and cook until wine mixture is reduced to 3/4 cup (about 10 minutes).
