This is a recipe I got from my mom who, I believe, got it from an aunt. Either way, it is really easy to throw together and disappears FAST! I made it this weekend and people were licking the bowl! This is a doubled recipe. I always make it this way because people gobble it up. Feel free to halve it if you are only making it for a few people, but, I can't guarantee there will be any left over!
Ingredients:
2 (15 ounce) cans no-bean chili
2 (16 ounce) cans refried beans
2 (8 ounce) blocks cream cheese, cubed
1 (16 ounce) bag shredded cheddar cheese or 1 (16 ounce) bag mexican blend cheese
Directions:
1. Preheat oven to 350.
2. Mix chili and refried beans together in casserole dish. Does not need to be perfectly blended.
3. Arrange cubes of cream cheese on top of mixture.
4. Place in oven for 20-25 minutes.
5. Swirl cream cheese into mixture with a knife.
6. Top with desired amount of shredded cheese.
7. Place back in oven for another 5-10 minutes, or until cheese is melted.
8. Serve with tortilla chips.
