An antioxident rich, immune system booster and super wake up smoothie juice for your mornings or anytime. Carrots, blueberries, honey, spinach and pumpkins are listed as super foods. This is a great smoothie or juice. The frozen berries make it more a smoothie than a juice and if you add ice cubes and crush through the blender or juicer it really becomes a treat. I made this with both strawberries and blueberries and enjoyed it . I also have made this with apples instead of the berries and it tastes just a good. The carrots are a natural sweetener as is the honey so sugars are not needed. When you feel sluggish or need a pick me up from weariness of bug fighting this is a great concoction to boost you and your fighting system. Made for RSC #13
Ingredients:
5 baby carrots
2 tablespoons honey (can add more for sweetness- save juice for another recipe)
1/4 cup pineapple chunk
1/2 cup frozen blueberries (or any type of fruit, strawberries work great as well)
1 teaspoon cinnamon
1/2 cup canned pumpkin
2 ounces frozen spinach (i broke a chunk off from my frozen box. guesstimate on amount)
Directions:
1. As per your juicer directions, feed all fruits through the hopper. If adding ice, add in prior to juicing (if your juicer can crush ice).
2. In the blender add all ingredients and churn to your thickness.
3. Share and enjoy.
4. Note- if not drinking at time of making, cover individual glasses and place in fridge, stir or reblend before drinking.
