Everyone loves these at Super Bowl parties. A couple years ago I brought them to the Orlando Brewing Company's party and two enormous platters were completely finished. You can buy the colored M&M's at or at M&M's World in Orlando, Las Vegas or New York. I make two batches, one for each team's colors. These could be considered good treats for people avoiding bad carbs since they have oatmeal instead of white flour, but healthy may be a stretch!
Ingredients:
1 cup brown sugar
1 cup sugar
1/2 cup butter, softened in microwave
3 eggs
1 teaspoon vanilla
1 teaspoon light corn syrup
1 1/2 cups peanut butter
2 teaspoons baking soda
4 cups oatmeal
1/2 cup chocolate chips
6 ounces m&m's plain chocolate candy, in team colors
Directions:
1. Mix all ingredients in a food processor or mixer, except for chocolate chips and M&M's which could get crushed; stir in the chocolate chips by hand.
2. Drop by tablespoons on an ungreased cookie sheet (I use a scoop which makes it so easy); then press 4-6 M&M's on the top of each cookie.
3. Bake at 350 degrees for 12-15 minutes or until just starting to turn brown; cool for 5-10 minutes before removing from cookie sheet to avoid breakage.
