This dressing, which I created for my Rustic Chicken Salad, will enliven any salad. Keep whisking while you drizzle in the oil—the vinaigrette will emulsify (thicken).
Ingredients:
8 tablespoons lemon juice
2 tablespoon dijon mustard
1 teaspoon sugar
salt and pepper, to taste
1/2 cup extra-virgin olive oil
Directions:
1. Combine the lemon juice, mustard, sugar, salt, and pepper in a bowl. Whisking constantly, slowly drizzle in the oil until the dressing has thickened.
2. Per serving (2 tablespoons): 137 calories, 2g carbohydrates, no protein, 14g fat, no cholesterol. Nutritional analysis provided by New Wellness, Richmond, Va.
