This is from WSU extension office. Dark leafy greens are super cancer fighters. The fruits contain vitamin C, carrots have beta carotine for good eyesight and they are all great for fiber.
Ingredients:
6 cups dark leafy greens
2 cups mandarin oranges or 2 cups oranges, pieces
1 cup pineapple tidbits or 1 cup pineapple chunk
1 cup shredded carrot
1 cup sliced cantaloupe
1 cup low-fat plain yogurt
1 tablespoon ranch dressing
Directions:
1. Place cleaned greens in salad bowl. Add fruits and vegetables. Mix dressing and pour over salad. Eat right away or chilled.
2. Variations: Add other vegetables and fruits that are bright and colorful. Any other dressing may be used.
