I love healthy, sweet salads. This has yogurt as a dressing and lots of fruit. This can also be a healthy snack.
Ingredients:
3 cups grated carrots
1 cup chopped tart, crisp apple
1 cup drained crushed pineapple
1 cup golden raisins
1/4 cup raw sunflower seeds
1/4 cup chopped pecans
1 8 oz container active-culture vanilla yogurt.
Directions:
1. Combine all ingredients except pineapple and yogurt.
2. Stir pineapple and yogurt together and pour over salad mixture and mix together.
3. Stir and chill for 1 hour before serving.
4. NOTE: Can purchase pre-grated carrots.
