high fiber vegan burger substitute. Can easily alter seasonings for own taste. also freeze and reheat quite well. serve on bun like regular burger, or by itself (I find it tastes and has texture oddly similiar to meatloaf, but quite yummy.
Ingredients:
4 c. vegetable broth
4 c. oatmeal
1/2 onion, chopped finely
1/3 cup canola oil
1/2 cup sunflower seeds
1/4 cup nutritional yeast
1/2 tsp ground coriander
1 tsp sage
1/4 cup soy sauce
3 cloves garlic
1/4 cup ground flaxseed
1 tbs amaranth
Directions:
1. combine everything but oatmeal
2. bring to a boil
3. add oatmeal and stir
4. cool until you can handle it
5. shape into patties, bake at 350 for about 25 minutes, turning half way thru.
