Ingredients:

  • cake : see post for easy simple white
  • 2 tbsp cornstarch
  • 3/4 cup sugar
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 tbsp butter
  • topping
  • 3 tbsp sugar
  • 1/2 tsp vanilla
  • 1 tbsp of water

Directions:

  1. Fillling:
  2. Combine cornstarch and sugar in medium saucepan.
  3. Stir in water.
  4. Add egg yolks, zest and lemon juice.
  5. Cook over medium heat, stirring often with a whisk until mixture comes to a boil.
  6. Cook for 1 minute longer, then set aside to cool.
  7. Topping:
  8. Pour whipping cream and sugar into a mixing bowl. Set vanilla aside in a small bowl. Do not whip yet.
  9. Dissolve gelatin in a cup with 1 Tbsp of boiling water. Make sure gelatin is completely dissolved and hot.
  10. Whip the whipping cream, sugar and vamilla. While whipping drizzle the HOT gelatin mixture while whipping. DO NOT stop the mixer while adding the gelatin.
  11. Continue whipping and add the vanilla
  12. Continue to whip until the mix forms soft peaks.
  13. To make the cake:
  14. Slice the cake horizontally with a long serrated knife.
  15. Spread fillling on bottom half and place top half on filling.
  16. Frost the cake with the topping.
  17. Cake should be refrigerated for storage.
