Sundried Tomato and Bacon Risotto

Ingredients:

Directions:

  1. Slightly undercook 1 cup brown rice in chicken broth
  2. Slice ~8 sundried tomatoes and pour boiling water on them, let stand 2 mins then drain
  3. Cook bacon in large skillet on medium-high heat 5 min. or until crisp, stirring occasionally. Drain bacon; discard drippings. Return bacon to skillet. Add mushrooms to skillet; cook 3 min., stirring occasionally. NOTE: if using cooked turkey or chicken bacon add bacon and mushrooms at same time
  4. ADD cooked rice, olive oil, oregano and tomatoes str 1 min.
  5. SPRINKLE with cheese.
