Ingredients:
1/2 cup flour
14 oz beef broth, reduced sodium
3 tbsp tomato paste
1 tsp dried thyme
1 tsp salt
1 tsp freshly ground black pepper
2 1/2 lb beef, top sirloiin
8 oz carrots
4 celery stalks, chopped
1 cup chopped onion
1 lb potatoes, scrubbed
Directions:
1. Coat 4-quart or larger slow cooker with cooking spray.
2. Add flour and gradually pour in broth, whisking constantly until smooth. Add tomato paste, thyme, salt, and pepper. Whisk to combine.
3. Add beef, carrots, celery, onion, and potatoes to cooker. Sppon some of the sauce over beef.
4. Cover. Cook on low 8 to 9 hours or on high 4 to 4 1/2 hours, or until meat is tender and thermometer inserted into center reads 160 degrees F.
