Sun Dried Tomato Dip

Just something a little different to serve with cracker's or on your cheese platter. It can all be store in the fridge for a few days prior to serving. I use garlic from a jar just to make this a lot easier.
Ingredients:
1/2 a capsicum, diced
100 g chopped sun-dried tomatoes
1/4 cup balsamic vinegar
1/4 cup white vinegar
1/4 cup sugar
1 garlic clove, very finely diced
250 g cream cheese
Directions:
1. Simmer all the above ingredients, except for the cream cheese, for about 45 minutes until softened and thickened.
2. Cool.
3. To serve: Turn cheese onto platter and pour over the cream cheese ~ serve with crust bread, crackers or savour biscuits.
