From . I made this for my 3-year-old nephew-a very picky eater who comes from a mac n cheese/pizza roll family-when he visited our vegan home for a week. Great on crackers, toasted baguettes, pretzels, as a veggie dip or on a sandwich. Has a very cheesy flavor.
Ingredients:
3/4 cup cashew pieces, raw
1/4 cup nutritional yeast
1/2 teaspoon salt (optional)
3/4 cup soy yogurt, plain
1 garlic clove
6 sun-dried tomatoes
Directions:
1. Grind cashews finely in blender or food processor.
2. Add the other ingredients, and process until smooth.
3. Serve immediately, or chill. The spread will thicken in the fridge.
