Sun Dried Tomato And Artichoke Risotto

This slow cook creamy rice is so full of flavor, it will blow you out of the water. Goes great with chicken or steak. An absolute for a romantic meal and well worth the time.
Ingredients:
4 cups of low sodium chicken stock
1 cup of white wine
1 cup of water
3 t olive oil
1 small-med onion
4 cloves garlic minced
1 c arborio rice or risotto rice
1/2 c sundried tomatoes, drained and chopped
1 1/4 tsp salt
pinch pepper
1/4 c of fresh basil or 11/2 tsp dried
1/4 c fresh parsley or 1 1/2 tsp dried
1 c rinsed and chopped artichoke hearts
1/2 c fresh parmesean cheese
Directions:
1. In large bowl combine broth, wine, and water.
2. Heat olive oil in pan on medium heat.
3. Add onion and garlicsaute unitl translucent (5 min.)
4. Add rice to mixture and saute for 2 min. until rice crackles and begins to turn brown.
5. Add 1 cup of liquid, salt, pepper, stirring constantly until it all absorbs.
6. Add sundried tomatos, basil and parsley.
7. Continue to add 1 cup of liquid each time until absorbed. Repeat process
8. Add artichoke hearts to warm upif wanted
9. The risotto should be tender and slightly firm in the center with a creamy sauce.
10. Stir in parmedean chesse and serve warm
