We all know those days when you open your fridge and there's nothing you want to eat! I came up with this salad on a day like that!I ended up just mixing all my fridge ingredients into a salad and now its a summer lunch/ dinner favourite! Read more !
Ingredients:
2 cups baby spinach
2 chicken breasts, cubed and sauteed in your favourite stir fry sauce eg. sweet and sour/ teriyaki
1 ripe avocado, cubed
1 cup blueberries
1 gala apple,cubed
1/4 cucumber, cuber
bean sprouts
1/4 cup toasted almonds
salt pepper
your favourite poppyseed dressing or raspberry vinaigrette
Directions:
1. Toss the spinach, avocado, blueberries, apple,cucumber and almonds with the Poppyseed dressing. Sprinkle salt and black pepper. Divide between 2 plates and top with the chicken and bean sprouts!So easy and so yummy!
