Summertime Peach And Fennel Salad

Peaches peel very easily if you slice a small x into the bottom end, plunge into boiling water for 30 seconds or until you begin to see the skin peel away, then submerge in ice cold water to cool. After this you can simply peel away the skin with your hands.
Ingredients:
1 small bulb fennel, bulb thinly sliced, +3 tbsp of the fronds chopped
3 peaches, peeled and diced
1/2 tbsp fresh thyme, chopped finely
1/2 tsp cinnamon
2 tbsp orange juice
2 tbsp honey
1 tbsp olive oil
salt and pepper
Directions:
1. Whisk together the orange juice, honey, thyme, cinnamon and olive oil.
2. Gently stir the fennel and peaches with the prepared dressing. Season to taste with salt and pepper. Enjoy!
3. Great with fish or chicken.
