Summer Vegetable Beef And Bowtie Soup

Combo of fresh veggies,fresh herbs,and tender beef simmered slowly to perfection!
Ingredients:
!lb. lean beef round cubes cut in small bite size pieces
1 medium sweet onion diced or chopped
2 large stalks celery diced or chopped
2 small fresh zuccini sliced thin
1 small yellow squash sliced thin
4oz. fresh string beans sliced
about 6 oz. fresh lima beans
3 ears white corn (remove from husks with knife)
2 carrots peeled and sliced thin
1 large can of whole tomatoes in puree
1 16 oz. can cannilini beans drained
2 bay leaves
one tbls. fresh thyme
two tbls. fresh oregano
two tbls, chopped fresh italian parsley
kosher salt and fresh pepper to taste
1 teaspoon hot sauce(more if desired)
1 lime juiced
(dried herbs may be substituted use 1/2 amount)
olive oil to saute,about 2 tablespoons or as needed
water to cover all
eight ounces of bowtie noodles (or any you prefer)
Directions:
1. In a large heavy pot,heat olive oil
2. Add meat and saute'
3. Add onions,celery,carrots,saute'.
4. Cover with water
5. Add herbs.
6. Simmer uncovered about two hours
7. Add more water as needed
8. Add canolini beans
9. Chop tomatoes in puree
10. Simmer about 30 minutes more
11. REMOVE BAY LEAVES
12. Add squash,corn,lima,and string beans
13. Add hot sauce
14. Bring to a boil
15. Add Bowties or any noodles
16. Cook till bowties or noodles are tender
17. Stir in fresh lime juice
18. Serve with hot rolls,bread,or crackers.
