Haven't tried this yet, but sounds good. Got this out of Weight Watcher cookbook. 3/4 cup=1pt or 76 calories.
Ingredients:
2 teaspoons extra virgin olive oil
1 zucchini, thinly sliced
1 yellow squash, thinly sliced
3 garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup diced seeded tomato
1/4 cup parmesan cheese
Directions:
1. Sauté zucchini, yellow squash, garlic, salt and pepper about 5 minutes.
2. Add tomato and sauté 2 minutes.
3. Sprinkle with cheese and serve.
