Summer Squash Casserole

This is a family fave for get togethers and any time of the year. My kids absolutey love it!!
Ingredients:
3 large summer suqash, rinsed, and chopped
5 tblsp no salt butter
1/2 a box of velveta cheese, cubed
1 medium onion, cubed
2 cups ritz crackers, crushed
dash of salt and pepper
Directions:
1. Preheat oven to 350.
2. Melt 1 Tblsp butter in skillet over medium high heat, add suqash and onion and saute.
3. Melt 4 Tblsp butter in microwave, add to crackers.
4. In a large baking dish pour one layer of sqush and onion, alternating with one layer of cheese.
5. Top with crackers.
6. Bake at 350 for 30 to 35 minutes until golden brown.
