Summer Squash Casserole

This is probably loaded with calories but it is also loaded with flavor. It is nice when your garden gives you a lot of squash and you get tired of doing the same old thing with it.
Ingredients:
6 cups summer squash
1/4 cup chopped onion
1 (10 1/4 ounce) can cream of chicken soup
1 cup sour cream
1 cup shredded carrot
8 ounces seasoned stuffing mix
1/2 cup butter (melted)
Directions:
1. Cook the squash and onion in some water for 5 minutes; drain well.
2. Mix together the soup and sour cream.
3. Stir in the shredded carrot.
4. Fold in the squash and onion.
5. Combine the stuffing mix with the melted butter; mix well.
6. Spread one-half of the stuffing in 7 1/2 x 12 pan.
7. Add the squash mixture.
8. Then add the rest of the stuffing on top.
9. Bake 350 degrees for 25-30 minute.
