SUMMER SQUASH AND CREAM CHEESE CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baxter Estate in Euless, Texas in 1989.
Ingredients:
6 medium squash cut into chunks
1 large white onion chopped
1/2 bell pepper chopped
2 tablespoons margarine
8 ounces cream cheese softened
1/2 cup cracker crumbs
4 tablespoons crumbled bacon
Directions:
1. Steam squash, onion and bell pepper until just tender then drain any excess liquid.
2. Stir in margarine and cream cheese until melted.
3. Pour into buttered baking pan then top with cracker crumbs and bake at 350 until bubbly.
