Ingredients:
12 cups chopped cabbage (about 2 medium cabbages)
3 medium onions, coarsely chopped
3 medium tomatoes, peeled and chopped
3/4 cup sugar
1/2 cup tomato juice
1/4 cup vinegar
2 1/2 teaspoons salt
3/4 teaspoon pepper
Directions:
1. Combine cabbage, onion, and tomato in a large mixing bowl. Set aside.
2. Combine sugar, tomato juice, vinegar, salt, and pepper; mix well. Pour over cabbage mixture; toss. Cover and chill.
3. Garnish with onion rings before serving, if desired.
