This quiche goes together quickly and is good. You don't need a crust.
Ingredients:
1 cup chopped zucchini
1 cup chopped tomato
1/2 cup onion
1/3 cup parmesan cheese
1/2 cup cheddar cheese
1 cup milk
2 large eggs, beaten
1/2 cup bisquick
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. dried basil, or fresh basil
Directions:
1. Grease a 9 pie plate.
2. Add the first five ingredients and put in pie plate
3. Combine the remaining ingredients and pour over the vegetable mixture.
4. Bake at 400* until a knife inserted in the center comes out clean, about 30 min.
