Summer puddings are traditionally British. This one is Weight Watchers, so is low on sugar.
Ingredients:
9 slices white bread, crusts removed
2 12-ounce bags frozen mixed berries or 5 cups fresh mixed berries (or whatever berries you have!)
1/2 cup sugar
1/3 cup orange juice
1 tsp. grated lemon zest
Directions:
1. Line a 1-quart bowl with enough plastic wrap to hang over the sides of the bowl by about 3 inches all the way around. Line the bowl with 7 of the bread slices, trimming to fit just below the rim.
2. Combine the fruit, sugar and orange juice in a medium saucepan; bring to a boil. Cook over medium heat until the fruit is just softened, about 5 minutes. Remove from the heat and stir in the lemon zest.
3. With a slotted spoon, transfer the fruit to the prepared bowl; set aside the juice. Top with the remaining 2 slices of bread and the bread trimmings from above. Drizzle with 1/2 cup of the fruit juice. Fold the plastic wrap over the top of the pudding to cover,. Place a plate, smaller than the mouth of the bowl, on top of the pudding. Set a weight such as a 28-ounce can on top and refrigerate overnight.
4. To serve, remove the can and invert the pudding onto a serving plate, removing the plastic wrap and cutting the pudding into wedges.
5. Serve with ice cream, frozen yogurt or whipped cream if desired.
6. Makes 6 servings. 1 serving (plain) = 239 calories/4 points.
