My mother made a Pasta salad similar to this when I was growing up...but she put cheese in hers. I never liked it and decided to create my own version of a pasta salad with veggies that I like instead. If you wish to substitute Real Mayonnaise instead of the Miracle Whip that would be okay...I prefer to use Miracle Whip in the summer due to safety issues. Cooking time is actually chilling time.
Ingredients:
1 lb cooked pasta (ala'dente) or 1 lb macaroni (ala'dente)
1/2 medium sweet onion, chopped fine
3 stalks celery, chopped
1/4 th red bell pepper, chopped
1 cucumber, peeled seeded, and chopped
1/2 cup frozen uncooked peas
4 hard-boiled eggs, chopped
2 -3 cups miracle whip
2 tablespoons sugar
1/2 teaspoon black pepper
2 tablespoons parsley
paprika
Directions:
1. Mix all but the last ingredient in a large bowl for easy mixing, until well blended. You want the salad to be creamy without being overloaded with dressing so add more if needed. Transfer to a smaller bowl and top with sprinkles of paprika.
2. Cover with plastic wrap and chill at least 2-3 hours.
3. Serve.
