This is a very generous sized meal. Add more or less as desired. I made these when I got fresh corn and it was the best hobo meal that I've made yet. I made four of these meals at the same time in a small oven so my cooking times are based on that. Read more . It's a go-away-and-do-things-while-it-cooks meal and come back and take it out sort of thing. Very handy when your're busy.
Ingredients:
italian sausage
one medium potato, cut in pieces
4-8 baby carrots
fresh onion slices to taste
medium tomato, cut into chunks
ear of sweet corn
seasoning salt
pepper
Directions:
1. Preheat oven to 400ºF.
2. I use heavy duty foil, cut into 18 X 18 pieces.
3. Put ear of corn into center of foil, shiny side in.
4. Add potatoes, carrots, onion and tomatoes on top and sides.
5. Season with seasoning and pepper.
6. Put sausage on top, add 1/4 cup of water and seal foil packet so no moisture will not leak out
7. Put each packet into the oven and bake for about 1 hour. Turn oven off and allow to set for at least a half hour.
8. Allow to rest for at least 15 minutes before serving.
9. I always use frozen meat so cooking time will be less if meat isn't frozen.
