Summer Garden Salad

This salad uses squash in a different way. My family loves it!
Ingredients:
1 small zucchini
1 small yellow squash
1 small sweet red pepper
1/2 cup poppy seed salad dressing
Directions:
1. Cut the squashes into slices no wider than 1/4-inch. Julienne the red pepper.
2. Steam the vegetables until they JUST begin to soften. Remove from the heat and blanch in cold water to stop the cooking. Cool the vegetables quickly.
3. Toss with dressing.
