A nice, light summer appetizer we often have before dinner.
Ingredients:
1 cucumber, peeled,seeded,& chopped
1 slice red onion, sliced however you prefer
1/4 cup olive oil
1/4 cup red wine vinegar
1/2 teaspoon garlic salt
crushed black pepper
1 teaspoon parmesan cheese
Directions:
1. Combine ingredients, mixing well.
2. Divide into two bowls leaving some liquid in the bottom of each bowl.
3. Refrigerate if desired and eat later or enjoy now!
