Bulgur Kofte is a different version of another traditionally Turkish recipe, bulgur buttons, from middel of to anatolia in Turkey. Koftes are usually made with ground meat ,be flaked with bone and meat broth with some cutted potatoes. Read more ..but this one requires only bulgur and green lentil cause ı didnt have this time other ingredients.., These koftes are easy to make and delicious. my moms favorites and we made today..
Ingredients:
for the meatballs
1 pound ground beef
3/4 cup fine bulgur
1 sm-med onion finely grated
1/2 cup flour
red pepper flakes approx 1/2 tbsp
tomato paste 1 tbsp
salt to taste
approx 1 tbsp oil- or 1/2 cup water to coat the meatballs
for the stew
1/2 cup green lentil boiled
2 cups be flaked with bone
4 tbsp of butter
4-5 cups of meat broth
Directions:
1. Wash fine bulgur with warm water and strain a side then add to Grated the onion, then mix all the ingredients for the meatballs together in a bowl and knead with hands for 5 minutes until everything is mixed together.
2. To test and see if the meatballs will stay together when cooking, make one meatball about the diameter of a penny or a nickel by taking a dab of water(oil)on your hands and rolling the meat in the palm of your hands until if forms a sphere.
3. Put this one meatball in a small cup of water (make sure the water covers the meatball) and let it sit for 5 minutes. If it falls apart, you must add more bulgur, if it stays together, you are ready to make your meatballs.
4. and than in big pan ..boiled water, add meatballs, green lentil ,bones ..when they cooked almost 45 minutes..fired butter in a pan add some spiecys and add to boiled ingridients..
