Sugar-Free Spinach Salad

Ingredients:
3 slices bacon, cut up
4 cups fresh cleaned spinach leaves
1 cup sliced mushrooms
1/4 chopped red onion
1/4 cup unsweetened apple juice concentrate, thawed
1/3 cup red wine vinegar (or white)
Directions:
1. Add spinach, onions and mushrooms to large bowl, mix.
2. Fry bacon till crisp. Remove all bacon dripping but 2 tablespoons Add apple juice CONCENTRATE and vinegar, bring to a boil. Pour over salad, mix well, and serve.
