6 large or 12 regual size muffins filling but good health snack
Ingredients:
1 cup wheat bran
1/2 cup flax seed
1 cup nonfat milk
1/2 cup unsweetened applesauce
1/4 cup egg beaters egg substitute
2/3 cup splenda brown sugar
1 teaspoon vanilla
3/4 cup whole wheat flour
1/4 cup wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup dried blueberries
1/2 cup dried cranberries
Directions:
1. oven 375F mix together wheat bran flax milk.
2. mix together appleauce egg brown sugar and vanilla.
3. beat in bran mix add flour wheat germ baking soda /powder
4. just blend.
5. scoop into muffin tins.
6. mix should be heavy(thick)
7. bake for 15 to 20 min check with toothpick for doneness ovens are variable.
