From Sweet & Sugar Free 1/8th of one 9 cake
Ingredients:
1 banana
1 egg
2 tablespoons original applesauce
1/6 cup plain nonfat yogurt
1 tsp baking powder
1/2 tsp baking soda
3/4 cup whole wheat flour
2 tsp ground cinnamon
Directions:
1. Mash the banana and mix with the egg, applesauce, and yogurt until creamy.
2. Stir in the baking powder, baking soda, flour, and cinnamon. Do not overwork.
3. Scrape and smooth into a greased and floured 9 pan. Bake at 350 degrees for 15 minutes or until toothpick comes out clean.
4. Recipe is easily doubled for a 2 layer cake. To assemble, separate cakes with crushed fruit or jam and top with whipped cream.
