I received this recipe in 1969 when baking to sell , from my sisters mother in law Anne O Rielly. Nice simple recipe, and not expensive. Usually ingredients are always on hand.
Ingredients:
3/4 cup raisins
1 large egg
2/3 cup brown sugar
1/3 cup melted margarine, solid type
1 1/8 cups pastry flour or 1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
Directions:
1. Heat oven 350 degrees.
2. Grease 8 inch baking pan and line if desired with buttered parchment.
3. Rinse raisins well, and then drain.
4. Beat egg , stir in the sugar, vanilla, and melted margarine.
5. Add sifted dry ingredients and then stir in the raisins.
6. Spread into prepared pan.
7. Mix the sugar and cinnamon together, and sprinkle over batter evenly.
8. Bake for 22- to 25 minutes in moderate oven, until tester comes away clean.
9. Cool in pan.
