I hate sugar cookies. I think they taste like slightly sweetened playdough. But I love decorating cutout cookies, and so have been on a long, long search for cutout cookie dough that tastes good, too. I found this recipe in a random free-book-club cookbook called Season's Greetings. This dough makes beautiful cutout cookies, and they are so, so delicious! The cookies are a little more fragile that your general spackle-dough recipe, but it is so worth it! Choose sturdy shapes likes stars and snowmen (snowflakes one year were a disaster), and your friends will love you!
Ingredients:
1 1/8 cups real butter
1 cup sugar
1/4 teaspoon salt
3 egg yolks
1 1/2 tablespoons heavy cream
1/2 teaspoon vanilla
3 cups flour
Directions:
1. Cream the butter, sugar, and salt with an electric mixer until light and fluffy, AT LEAST two minutes.
2. Add the egg yolks, cream, and vanilla. Mix another two minutes.
3. Add the flour and mix until incorporated.
4. Divide the dough into three discs, flatten each, wrap in plastic wrap, and refrigerate until firm.
5. Roll one disc at a time between two sheets of waxed paper to 1/4 inch thickness, freeze in the paper for 15-30 minutes.
6. Preheat the oven to 325°F.
7. Remove one sheet of dough from the freezer, and cut shapes. Reroll the scraps in waxed paper (PLEASE do not add more flour!) and refreeze.
8. Bake cookies on a parchment-lined cookie sheet for 8-12 minutes until they begin to barely brown around the edges. They will firm up as they cool, I promise!
9. Remove to racks to cool, then decorate!
