Here's a recipe my cousin Sue gave me that we make every year. It's delious hot or cold, but we usually chill it covered over night and serve it cold with whip cream or vanilla ice cream the next day. This one is great for the ole sweet tooth. Prep time does not include cleaning persimmons and making the pulp.
Ingredients:
2 1/2 cups flour
1/2 cup melted butter
3 cups persimmon pulp
1 1/2 cups sugar
1 cup buttermilk
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
4 eggs, beaten
Directions:
1. Perheat oven to 350 degrees.
2. Mix all ingredients together well.
3. Pour into a well greased 9x13x2 pan.
4. Bake at 350 degrees for 35-40 minutes till browned.
