Stuffing Stuffed Mushrooms

Ingredients:
1/4 cup(s) basil - fresh & chopped
1 egg - slightly beaten
1 cup(s) grated cheese
1/4 cup(s) green onions - chopped
18 large button mushrooms - stems reoved
2 tablespoon(s) oilive oil
1/4 cup(s) parsley - fresh & chopped
2 cup(s) stuffing or bread crumbs
Directions:
1. Preheat oven to 400 degrees
2. Break up stuffing in bowl. Leftover stuffing works great for this, or use bread crumbs and crumble.
3. Add 3/4 cup cheese, egg, parsley, basil, green inion and dash of Cayenne pepper.
4. Mix well.
5. If it seems dry, add 1-2 tbsp olive oil to moisten.
6. Season with salt and pepper.
7. Remove stems from the center of mushroom cups with a spoon. You can chop the stems and mix with the stuffing mixture or save and use for another recipe.
8. Fill each mushroom cap with stuffing mixture.
9. Place on a baking sheet that is coated with cooking spray or olive oil.
10. Sprinkle each with remaining cheese.
11. Bake until stuffing is golden brown on top and cheese is melted (approx 15-18 minutes.
12. Serve hot or at room temp.
