Stuffed Zucchini With Yogurt Sauce

If you love zucchini this is the recipe for you. Lots of great flavors going on here. I eat this as a main dish but it is awesome as a side dish with pork, chicken or seafood. Enjoy
Ingredients:
4 medium zucchini
1/4 cup red lentils
1/2 cup bulgur
3 tablespoons olive oil
1 onion chopped
1/2 tomato minced
1 clove garlic mashed
1 teaspoon salt
4 teaspoons lemon juice
1/4 cup fresh parsley
2 teaspoons cornstarch
2-1/2 cups plain yogurt
1 clove garlic mashed
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Wash zucchini well.
2. Do not trim ends.
3. Cut each zucchini in half lengthwise.
4. Scoop out all seeded portion of zucchini flesh.
5. Sprinkle a tiny amount of salt into each shell then set aside for one hour.
6. Wash and drain lentils then simmer in 2 cups water for 2 minutes.
7. Allow to sit covered for 45 minutes.
8. In a bowl cover bulgur with 3 cups water and let sit for one hour.
9. When lentils have sat for 45 minutes bring to simmer again.
10. Lower heat and simmer for 10 minutes or until tender then drain and put in a bowl.
11. Drain bulgur and squeeze out as much liquid as possible.
12. Put bulgur in same bowl as lentils.
13. Heat olive oil in skillet over medium flame then sauté onion for 2 minutes.
14. Add tomato then sauté for another 2 minutes.
15. Mix sauté with lentils and bulgur.
16. Add garlic, salt, lemon juice and parsley then mix well.
17. Arrange a steamer by setting a colander on top of a large pot with an inch or so of water.
18. Stuff zucchini with lentil bulgur mixture.
19. Place stuffed zucchini in colander and cover then steam 15 minutes until just tender.
20. Mix cornstarch and 1 tablespoon water in a bowl then add yogurt and whisk until creamy.
21. Put yogurt in heavy saucepan and bring to simmer over medium low heat stirring constantly.
22. When yogurt begins to bubble lower heat and cook for 5 minutes stirring gently.
23. Add remaining sauce ingredients and mix well.
24. Put cooked stuffed zucchini on plates and top with sauce.
