Stuffed Waxed Peppers

A different finger food or depending on how bad you want to be...serve it with the broth over rice.
Ingredients:
1 jar yellow – mild waxed peppers or fresh fat chili peppers, cap and remove seeds
country style sausage
2 t white vinegar
water
Directions:
1. Cap and clean seeds from peppers using gloves and wash.
2. Stuff peppers with sausage (a little time consuming, but worth it).
3. Place peppers in a pot.
4. Cover with water.
5. Add vinegar.
6. Bring to a boil.
7. Lower the heat to medium
8. Cook the stuffed peppers until tender (approximately 1 hour).
9. Drain and put in serving dish as an appetizer, or reserve the broth and serve with rice.
