These are incredible. I had this dish at my pastor's house when he had us over for dinner and it is incredible. Enjoy
Ingredients:
4 large baking potatoes
1 white onion finely chopped
4 ounces sliced mushrooms
1 small can sweet corn drained
1 red pepper finely diced
1 garlic clove crushed
2 ounces butter
4 ounces cheese grated
1 tablespoon fresh tarragon chopped
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Scrub and prick potatoes then bake at 450 for 1-1/2 hours.
2. Remove from oven and leave it to cool slightly.
3. Halve the potatoes and scoop out insides and mash until soft and fluffy.
4. Sauté onion, mushrooms, sweet corn, red pepper and garlic in butter for a few minutes.
5. Place potato skins on a baking sheet.
6. Mix together the mashed potato, vegetable mixture, half the cheese and all the chopped tarragon.
7. Season with salt and pepper the pile mixture back into skins and sprinkle with remaining cheese.
8. Return potatoes to oven and turn down heat to 375 then cook 20 minutes longer and serve.
