Stuffed Portabella Caps

A great side dish for mushroom lovers.
Ingredients:
3 mushrooms, portabella
3 tablespoons bread crumbs
1 tablespoon olive oil
3 tablespoons parmesan cheese, shredded
1/4 teaspoon salt
1/4 teaspoon fresh black pepper
Directions:
1. Preheat oven to 450 degrees.
2. Remove the stems from the portabella caps and place them gill side up on a cookie sheet covered in parchment paper. Sprinkle with a dash of sea salt and pepper.
3. Roast mushrooms for 20 minutes.
4. Meanwhile, combine bread crumbs, olive oil, cheese, salt, and pepper in a small bowl.
5. Remove mushrooms from oven. Spoon about 2 tablespoons of the stuffing onto each mushroom cap.
6. Return mushrooms to oven for 5 minutes or until the bread crumbs are golden brown. Serve hot.
