This dish is quick and easy. just for a note if I have stuffing left over i will add some to the chicken stock in the boil at the end to thicken up. Also goes great with egg noodles.
Ingredients:
4 thick cut pork chops
1 cup crushed saltines
1 teaspoon white sugar
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 teaspoon garlic powder
7 tablespoons melted butter, divided
1 small yellow onion, chopped
2 tablespoons dried parsley
2 cups chicken broth
Directions:
1. Make slits in pork chops to form a pocket in fat end.
2. Combine saltines, sugar, pepper, salt, garlic powder, 5 tablespoons of the melted butter, onions, and parsley; mix well.
3. Stuff chops generously and skewer shut with toothpicks.
4. Heat the remaining 2 tablespoons of melted butter in a skillet.
5. Brown chops slowly over medium heat for 5 minutes on each side.
6. Add chicken broth and simmer over low heat for 30 minutes until tender, turning chops at least once.
7. Uncover turn heat to med. high, and boil 2 min. or until liquid has thickened/reduced.
8. Remove toothpicks and pour pan juices over pork chops before serving.
