Stuffed Pepper Soup

My family asks for this at least once a week. It tastes like stuffed peppers without all the work. Also I have found that people that liked stuffed peppers, but don't like the pepper itself they love this. This is also a great recipe to double, triple or half.
Ingredients:
2 lbs. ground meat (i use hamburg, but you can use turkey or sausage)
2 med onions diced
2 med green peppers diced
2 lg cans tomato juice
2 cans italian tomato sauce
2 cups minute rice
salt and pepper to taste
Directions:
1. Brown ground meat in large stock pot, drain if needed
2. add onion and peppers cook till slightly tender
3. add tomato juice and sauce warm through
4. add minute rice salt and pepper cook till rice is soft stirring often.
5. ( I cook the rice on the side if I don't plan on using all the soup that day, I put a spoon of rice on bottom of bowl and ladle soup over the rice. Any that is left over I store in individual containers so that the rice doesn't make the soup overly thick.)
