Tastes JUST like a stuffed pepper....only better! For a more flavorful soup, replace the tomato sauce with a lower calorie / lower sugar spaghetti sauce like Hunts or Light Ragu. This is what my family likes best, and it doesn't change the calories per enough to make a difference.
Ingredients:
1 pounds ground chicken breast
1 pounds 4% fat ground beef
2 quarts water
28 ounces tomato sauce
28 ounces diced tomatoes, undrained
1 cup long grain rice, uncooked
2 cups chopped green peppers
1/4 cup packed brown sugar
2 teaspoons salt
2 teaspoons beef bouillon granules
1 teaspoon pepper
Directions:
1. In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender.
