Green pepper stuffed with ground beef, rice, onion, and cheese
Ingredients:
1/2 cup cooked brown rice
1/4 pound lean ground beef
1 cup canned tomatoes, no salt added
1 green pepper
1/4 cup reduced fat feta cheese
1/4 cup low fat cheddar cheese
1/2 onion
Directions:
1. Saute beef with onion (ad spices if desired) until brown.
2. Mix sauted beef and onion with cooked brown rice, canned tomatoes, and feta cheese. Bake at 425 for 30 minutes.
3. Ad cheddar cheese to top of peppers and melt for 5 minutes in oven.
