This is my personal recipe, the ones I make for catering gigs. These babies fly off the plate like they were made of dollar bills. If you like garlic, you'll LOVE these. Be sure to check out Chef Kelsey's version as well, cos it rocks.
Ingredients:
1 package of small, white mushrooms (about 8-10), scrubbed
5 cloves of fresh garlic, diced
1 egg
1 cup plain breadcrumbs (or more if needed)
1 fistful of each: basil, rosemary, thyme, parsley
salt and pepper to taste, i put a lot.
1 tbspn olive oil
Directions:
1. Remove stems from mushrooms and dice.
2. Saute' with Garlic over a medium-high flame in the olive oil until fragrant, about 2-5 minutes.
3. Put into large mixing bowl, add breadcrumbs, add herbs, spices and mix well.
4. Add lightly beaten egg, mix well until crumbly.
5. Put mushrooms into baking pan, stuff with mixture.
6. Bake at 350F for 30 minutes.
7. Eat yourself sick.
