This is a different twist on meatloaf and it makes a wonderful difference. My husband, who is not a meatloaf fan, loves this one.
Ingredients:
2 eggs
2 tablespoons milk
1/4 cup ketchup
1 1/2 teaspoons salt
1/8 teaspoon pepper
1 1/2 lbs lean ground beef
1/2 lb fresh mushrooms, sliced
1 medium onion, chopped
2 tablespoons butter or 2 tablespoons margarine
2 cups soft breadcrumbs
2 tablespoons chopped fresh parsley
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
Directions:
1. Beat eggs, milk, ketchup, salt and pepper in a large bowl.
2. Add the beef and mix well.
3. Put half of the meat mixture in a 9 x 5 x3 loaf pan; set aside.
4. Saute the mushrooms and onions in butter for about 3 minutes.
5. Add the breadcrumbs, parsley, thyme, salt and pepper.
6. Saute until the breadcrumbs are browned.
7. Spoon the breadcrumb mixture over the meat mixture and press down gently. Place remaining meat mixture as top layer.
8. Bake at 350 for about 1 hour or until no longer pink.
