Stuffed Jalapenos

My Husband and 13yr son love these. I always make double stuffing and use it as a filling for biscuits the next morning.
Ingredients:
30 fresh jalapenos
1/2 lb ground sausage( browned and drained)we use hot, but go with your own taste
6 oz ricotta cheese
1c shredded cheddar cheese
1tbs crushed red pepper(optional)
Directions:
1. slice tops off of Jalapenos, take membrane and majority of seeds out
2. mix browned and drained sausage,ricotta cheese, cheddar cheese and red pepper
3. put cheese mix into a ziplock bag
4. cut 1 corner of ziplock and squeeze into prepared jalapenos (I usually put the dish I'm going to bake them on it's side to keep them standing the correct way untill all are filled, then use crumpled foil to fill any empty space before i set dish upright again)
5. bake for 20 min on 425 or till cheese is bubbly
